Thai Stuffed Wings - Peek Gai Yud Sai


Ingredients

Chicken Wings (Wing's part only)  1 Kg

Oyster Sauce                  100 Ml
Maggi Seasoning           120 Ml
Garlic/Coriander Paste  60/40 Gm
White Pepper                 1 1/2 Tbsp
Sugar                                2 Tbsp

  1. Break and take out bones of wings.
  2. Marinade wings with all ingredients and leave to marinade overnight.
Fillings

White Fish or Dory     1 Kg
Kaffir Lime Leaves, finely shredded    8 Nos
Oyster Sauce                                   50 Ml
Maggi Seasoning                             50 Ml
White Pepper                                   2 Tbsp
Sugar                                               4 Tbsp

Spring Onion, finely chopped            2 Tbsp

  1. Blend fish with all ingredients till fine paste and add chopped spring onions. Mix well.
  2. Stuff each wing with about 50 grams filling.
  3. Steam wings for about 10 minutes till cooked.
  4. To serve, deep fried steamed wings until golden brown.
  5. Serve with Thai chili sauce.
